Artichoke leaves, which have a distinctively strong, bitter taste, contain cynarin, a compound that stimulates the liver to remove these toxic substances and which also boosts liver function. Fennel, celery ribs, dandelion leaves, and zucchini also improve the elimination of waste through the kidneys.
- 1 tsp artichoke leaves (from a globe artichoke plant), finely chopped,
- 1 medium fennel bulb,
- 4 fresh dandelion leaves,
- 4 celery ribs,
- 1⁄2 zucchini.
Makes 2 servings
- Juice all the ingredients, mix thoroughly, and drink.
- If the juice is too bitter, dilute it with some mineral water until it tastes palatable.
