Za’atar is a generic name for numerous herbs with a thyme-savory-oregano aroma. This combination is common in the Middle East, sprinkled on meatballs, kebabs, and vegetables, or used as a dip. Mixed to a paste with olive oil, it can be spread over bread before baking.
- 2oz (60g) sesame seeds
- 1oz (30g) ground sumac
- 1oz (30g) dried za’atar or thyme, powdered
Directions: dry roast the sesame seeds for a couple of minutes, stirring continuously. Let them cool, then mix with the sumac and za’atar or thyme. Store in an airtight jar or in a plastic bag in the freezer for 2–3 months.
