Taklia is a mix of garlic and coriander and it is used to flavor soups and stews just before they’re served. Popular throughout the Arab world, it’s broadly used in Egypt with melokhia, a dish that’s virtually the national soup.
- 3 garlic cloves salt
- 2 tbsp sunflower oil
- 1 tbsp ground coriander
- 1⁄2 tsp cayenne
Directions: crush the garlic with a little salt and fry in the oil till golden. Stir in the coriander and cayenne, mix to a paste and fry, stirring, for two minutes. Use at once.
