Sweet chili sauce is good with fried or grilled fish and seafood or spring rolls.
- 6 tbsp granulated sugar
- 4 medium, hot red chile peppers, seeds removed and finely sliced
- 2 garlic cloves, minced
- small piece of fresh ginger, peeled and cut into fine strips
- 5 tbsp rice or cider vinegar
- 1 tbsp fish sauce
- 3–4 tbsp chopped cilantro
Directions: heat 1⁄2 cup water and sugar together to make a syrup. Let it thicken a little, then stir in all the components except the cilantro. Bring to a boil and simmer for 3 minutes. Pour the sauce into a bowl and let cool, then stir in the cilantro. Taste for seasoning and add a little salt if needed, but the fish sauce makes it salty enough.
