South African curry powder mixture comes from the Cape. It is used with a paste of garlic and ginger pounded with salt; 2 tsp ground turmeric could be added.
- 2 tsp fennel seeds
- 2 tsp coriander seeds
- 2 tsp cumin seeds
- small piece of cinnamon stick
- seeds from 5 cardamom pods
Directions: grind all the ingredients and store for 2–3 months in an airtight container or in a plastic bag in the freezer.
