Pickling spices is an English mixture of whole spices used when pickling vegatables and fruits in vinegar.
- 2 tbsp pieces of dried ginger
- 11⁄2 tbsp yellow mustard seeds
- 2 tbsp mace blades
- 3 tbsp allspice berries
- 2 tbsp black peppercorns
- 21⁄2 tbsp whole cloves
- 2 tbsp coriander seeds
Directions: mix all the spices and use to flavor the vinegar that’s to be used in making the pickles. The spices can be added directly or put into a cheesecloth bag for later removal.
