Massalé is the spice blend of the French islands of the Indian Ocean—Mauritius and Réunion. The proportions of ingredients vary. It is used, with turmeric, to flavor dishes variously referred to as caris, curries, or massalés.
- 2 tbsp coriander seeds
- 2 tsp cumin seeds
- 2 tsp black peppercorns
- 1 tsp green cardamom pods
- 1 tsp whole cloves
- small piece of cinnamon stick
- 1 tsp ground hot chili powder
- 1 tsp grated nutmeg
Directions: dry roast the whole spices till lightly coloured and let cool. Grind finely, then stir in the chili and nutmeg. Store for 2–3 months in an airtight jar.
