Koreans have a variety of dipping sauces based mostly on mixtures of sesame, chile, vinegar, and soy sauce. They are served with dumplings and pancakes, with uncooked fish, vegetables, and grilled meats.
Jon Dip sauce:
- 1 tsp granulated sugar
- 1⁄4 cup soy sauce
- 2 tsp rice or cider vinegar
- 1 tsp toasted sesame oil
- 2 tsp toasted sesame seeds
- 1 scallion, very finely sliced
- 1⁄2 tsp ground hot chili powder
Directions: stir the sugar into the soy sauce and vinegar. When it has dissolved, add all the other ingredients. The sauce will keep in the fridge for several days.
