Chubritsa is the Bulgarian name for summer savory, and is widely appreciated there. A simple table condiment of dried savory, paprika, and salt, known as Sharena Sol (combined or colourful salt) is often on the desk.
Savory is also mixed with smaller quantities of dried spearmint, paprika, dried fenugreek leaves, a dash of chili, and salt to make a more robust mixture that’s used to flavor meat stews and bean dishes. Almonds or seeds such as pumpkin seeds can also be added. Grind the dried leaves and pass through a sieve to make a powder. If you utilize the nuts or seeds, dry roast them, cool, and grind. Combine them with the herb powder and then add the remaining ingredients.
