Argentine salsa criolla is a wonderful accompaniment to barbecued meats.
- 1 red onion, finely chopped
- 1 red bell pepper, finely chopped
- 2 tomatoes, seeds removed and chopped
- 1 garlic clove, finely chopped
- small handful of parsley leaves, chopped
- juice of 1 lime
- 2 tbsp light olive oil
- salt and freshly ground black pepper
Directions: mix all the ingredients in a bowl, cover and leave to rest for 1–2 hours so that the flavors blend. Use as a condiment with fish, meat, and poultry.
